Step-by-Step Instructions
- Begin by bringing a large pot of water to a rolling boil over high heat. Once boiling, add your preferred noodles (spaghetti, udon, or ramen) and cook according to the package instructions, typically 4 to 5 minutes, until they are al dente. Stir occasionally to prevent sticking.
- While the noodles are cooking, gather a mixing bowl and combine the peanut butter, chili oil, dark soy sauce, and black rice vinegar. Whisk until creamy and smooth, adjusting with hot noodle cooking water if needed.
- Once the noodles are cooked, drain them in a colander without rinsing.
- Transfer the drained noodles back into the pot or mixing bowl and pour the peanut sauce over the hot noodles. Toss gently to coat the noodles.
- If the sauce is too thick, add 1 to 2 tablespoons of hot noodle cooking water and mix until you've achieved the desired consistency.
- Serve the peanut noodles in a bowl, drizzling extra chili oil on top and garnishing with cilantro or green onions.

Notes
For the best texture, avoid rinsing the noodles after cooking, and store leftovers in an airtight container in the refrigerator for up to 3 days.
