  2. While the noodles are cooking, gather a mixing bowl and combine the peanut butter, chili oil, dark soy sauce, and black rice vinegar. Whisk until creamy and smooth, adjusting with hot noodle cooking water if needed.
  3. Once the noodles are cooked, drain them in a colander without rinsing.
  4. Transfer the drained noodles back into the pot or mixing bowl and pour the peanut sauce over the hot noodles. Toss gently to coat the noodles.
