- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Spread the oyster crackers in a single layer across the prepared baking sheet.
- In a medium saucepan, melt 2 sticks of butter over medium heat and stir in 1 cup of brown sugar, 2 teaspoons of vanilla extract, and ½ teaspoon of cinnamon. Stir for 3-4 minutes until it thickens.
- Pour the thick caramel sauce evenly over the oyster crackers and spread it with a spatula.
- Sprinkle 1 teaspoon of salt over the top of the crackers.
- Bake for 7-9 minutes, watching closely until the caramel is bubbly and slightly golden.
- Remove from the oven and allow to cool completely on a wire rack before breaking into clusters.
