Preparation Steps
  1. In a mixing bowl, combine crushed graham crackers, sugar, and cinnamon. Drizzle in melted unsalted butter and mix until crumbly. Line a muffin tin with cupcake liners and evenly press the mixture into the bottom of each liner. Chill the crusts in the refrigerator.
  2. In a large bowl, beat the cream cheese until smooth and creamy. Gradually add sugar, mixing until well incorporated. Add vanilla extract, flour, and egg. Mix gently, then pour over the chilled crusts, filling each liner about two-thirds full.
  3. Peel, core, and dice the Golden Delicious apples. Toss them with lemon juice, brown sugar, nutmeg, and cornstarch. Distribute evenly over the cheesecake filling, pressing gently.
  4. In a separate bowl, combine flour, oats, brown sugar, cinnamon, and melted butter until crumbly. Sprinkle generously over the apple layer.
  5. Preheat oven to 325°F (163°C). Bake for 28-30 minutes until edges are set and centers jiggle. Keep an eye on them.
  6. Allow them to cool in the pan for about 30 minutes. Then chill in the refrigerator for at least 2 hours.
  7. Drizzle with caramel sauce and add whipped cream if desired. Enjoy slightly chilled or warm.
