For the Salmon Bites
  • 1 pound Salmon fillets fresh or frozen; skinless preferred
  • 1/2 cup Cornstarch for coating
  • to taste Salt
  • to taste Pepper
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise creamy base of the sauce
  • 1/4 cup Sweet chili sauce for sweetness
  • 1-2 tablespoons Sriracha adjust to preference
  • 1 tablespoon Lime juice fresh
For the Bowl Assembly
  • 2 cups Cooked rice jasmine or brown rice
  • 2 cups Mixed greens fresh
  • 1 medium Sliced avocado for garnish
  • 1/4 cup Chopped green onions for garnish
  • to taste Sesame seeds optional

Method
 

Preparation and Cooking
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Cut salmon fillets into bite-sized pieces, season with salt and pepper.
  2. Coat salmon pieces in cornstarch until fully covered. Arrange them on the prepared baking sheet in a single layer.
  3. Bake salmon bites for about 15-18 minutes until golden brown and cooked through.
  4. While the salmon bakes, mix together mayonnaise, sweet chili sauce, Sriracha, and lime juice in a bowl until smooth.
  5. Cook rice according to package instructions, aiming for about 20 minutes total.
  6. Assemble bowls with rice, mixed greens, crispy salmon, avocado, and green onions on top.
  7. Drizzle the Bang Bang sauce over bowls and sprinkle with sesame seeds.

Notes
