Cooking Steps
- Melt the butter in a heavy-bottomed pot over medium heat for about 2 minutes.
- Sauté 1 cup of diced celery and ½ cup of sliced green onions for about 3-4 minutes until tender.
- Stir in ¼ cup of all-purpose flour and mix with the vegetables for about 1 minute.
- Warm 2 cups of whole milk and whisk it into the mixture, stirring until smooth, for about 2-3 minutes.
- Add 1 cup of heavy whipping cream, 2 tablespoons of tomato paste, and 1 tablespoon of Old Bay seasoning, along with salt and pepper to taste. Simmer for 4-5 minutes.
- Cook uncovered for about 5-7 minutes until the bisque thickens slightly.
- Fold in 1 pound of cooked shrimp and ½ pound of crab meat for about 2-3 minutes until heated through.
- Ladle the bisque into warm bowls, garnish with parsley or chives, and enjoy!
