For the Creaminess
  • 1 cup Shredded Cheddar Cheese Monterey Jack is a milder substitute.
  • 1/2 cup Sour Cream Greek yogurt can be used as a substitute.
For Garnish (Optional)
  • 1/4 cup Fresh Cilantro Optional; omit if desired.

Preparation Steps
  1. Cut boneless, skinless chicken breasts into bite-sized pieces. Season the chicken with chili powder, cumin, paprika, salt, and pepper. Set aside.
  2. Heat olive oil in a large non-stick skillet over medium-high heat until shimmering.
  3. Add seasoned chicken to the skillet and cook for 5-7 minutes until browned and cooked through.
  4. Incorporate sliced bell peppers and sauté for 5 minutes until they soften.
  5. Stir in corn and diced tomatoes, cooking for an additional 3-5 minutes until heated through.
  6. Reduce heat to low and sprinkle shredded cheddar cheese over the mixture. Cover and cook until the cheese melts.
  7. Garnish with freshly chopped cilantro before serving if desired.
  8. Serve warm, optionally with sour cream or Greek yogurt.
