Ingredients
  

For the Dough
  • 1 cup Water Lukewarm
  • 1/2 cup Milk Lukewarm
  • 2 tablespoons Honey Can substitute with sugar
  • 2 teaspoons Instant Yeast
  • 1 Egg Beaten
  • 2 tablespoons Sunflower Oil Can substitute with other neutral oils
  • 4 cups Flour All-purpose flour recommended
  • 1 teaspoon Salt
  • 2 tablespoons Butter Softened, unsalted preferred
For the Topping
  • 1/2 cup Parmesan Cheese Grated, may substitute with another hard cheese
  • 1 teaspoon Cayenne Powder Adjust based on spice tolerance
  • 1 teaspoon Onion Powder
  • 1 dash Black Pepper Powder
For the Chicken Filling
  • 1 pound Chicken Filet Boneless pieces recommended
  • 2 tablespoons Sambal Oelek Can replace with other chili sauces
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Cornstarch
For the Sauce
  • 1/4 cup Mayonnaise
  • 2 tablespoons Chili Sauce
  • 1 teaspoon Salt For coating chicken
  • 1 teaspoon Black Pepper For coating chicken
  • 1 teaspoon Onion Powder For coating chicken

Method
 

Dough Preparation
  1. In a mixing bowl, combine 1 cup of lukewarm water, 1/2 cup of lukewarm milk, 2 tablespoons of honey, and 2 teaspoons of instant yeast. Gently stir the mixture and let it rest for about 5 minutes until it becomes frothy.
  2. Once the yeast mixture is ready, add 1 beaten egg and 2 tablespoons of sunflower oil. Mix well until all ingredients are fully combined.
  3. In a separate bowl, blend 4 cups of all-purpose flour, 1 teaspoon of salt, and 2 tablespoons of softened butter. Gradually add this dry mixture to your wet ingredients, mixing until a dough forms.
  4. Knead the dough on a flour-dusted surface for 10-12 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm area for about 1 hour or until it has doubled in size.
Filling and Assembly
  1. Prepare the topping by mixing 1/2 cup of grated Parmesan cheese, 1 teaspoon of cayenne powder, 1 teaspoon of onion powder, and a dash of black pepper in a bowl.
  2. Marinate boneless chicken fillet pieces in a mixture of 1 teaspoon of salt, 1 teaspoon of onion powder, 1 teaspoon of black pepper, 2 tablespoons of sambal oelek, and 2 tablespoons of soy sauce for at least 30 minutes.
  3. After the dough has risen, gently deflate it and divide it into 14 equal pieces. Shape each piece into a ball and then roll it into a rectangle about 1/2 inch thick.
  4. Fold each rectangle in half, brush the top with milk, and dip one side into the cheese mixture. Arrange the shaped buns on a baking sheet lined with parchment paper.
  5. Cover the shaped buns with a kitchen towel and let them rise for another 30 minutes.
  6. Preheat your oven to 200°C (392°F) and bake the buns for 12-15 minutes or until golden brown.
  7. Coat the marinated chicken pieces with some cornstarch and fry in batches until golden brown, about 4-5 minutes per side.
  8. In a small bowl, mix together 1/4 cup of mayonnaise, 2 tablespoons of chili sauce, and 1 tablespoon of sambal oelek.
  9. Toss the crispy fried chicken in the sauce and stuff each baked bun with the spicy chicken and your choice of fresh vegetables.
