Dough Preparation
- In a mixing bowl, combine 1 cup of lukewarm water, 1/2 cup of lukewarm milk, 2 tablespoons of honey, and 2 teaspoons of instant yeast. Gently stir the mixture and let it rest for about 5 minutes until it becomes frothy.
- Once the yeast mixture is ready, add 1 beaten egg and 2 tablespoons of sunflower oil. Mix well until all ingredients are fully combined.
- In a separate bowl, blend 4 cups of all-purpose flour, 1 teaspoon of salt, and 2 tablespoons of softened butter. Gradually add this dry mixture to your wet ingredients, mixing until a dough forms.
- Knead the dough on a flour-dusted surface for 10-12 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm area for about 1 hour or until it has doubled in size.
Filling and Assembly
- Prepare the topping by mixing 1/2 cup of grated Parmesan cheese, 1 teaspoon of cayenne powder, 1 teaspoon of onion powder, and a dash of black pepper in a bowl.
- Marinate boneless chicken fillet pieces in a mixture of 1 teaspoon of salt, 1 teaspoon of onion powder, 1 teaspoon of black pepper, 2 tablespoons of sambal oelek, and 2 tablespoons of soy sauce for at least 30 minutes.
- After the dough has risen, gently deflate it and divide it into 14 equal pieces. Shape each piece into a ball and then roll it into a rectangle about 1/2 inch thick.
- Fold each rectangle in half, brush the top with milk, and dip one side into the cheese mixture. Arrange the shaped buns on a baking sheet lined with parchment paper.
- Cover the shaped buns with a kitchen towel and let them rise for another 30 minutes.
- Preheat your oven to 200°C (392°F) and bake the buns for 12-15 minutes or until golden brown.
- Coat the marinated chicken pieces with some cornstarch and fry in batches until golden brown, about 4-5 minutes per side.
- In a small bowl, mix together 1/4 cup of mayonnaise, 2 tablespoons of chili sauce, and 1 tablespoon of sambal oelek.
- Toss the crispy fried chicken in the sauce and stuff each baked bun with the spicy chicken and your choice of fresh vegetables.
