Preparation
- Preheat your oven to 375°F (190°C).
- Place each chicken breast between plastic wrap or parchment paper and pound until 1/2 inch thick.
- On each flattened chicken breast, lay one slice of turkey and a slice of Swiss cheese. Roll tightly and secure with toothpicks.
Breading
- Create a breading station with seasoned gluten-free flour, whisked eggs with milk, and garlic powder mixed with breadcrumbs.
- Dredge each chicken roll in flour, dip in egg wash, and coat with breadcrumbs.
Cooking
- Melt butter in a skillet over medium heat, add chicken rolls, and sear for about 4-5 minutes on each side until golden brown.
- Transfer to a greased baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- While baking, melt butter in a saucepan, whisk in flour, then gradually add milk and cook until thick. Stir in Swiss cheese until melted.
- Let the chicken rest for about 5 minutes, then slice and drizzle with Swiss cheese sauce before serving.
