Preparation
- In a large pot, combine the chicken broth, sliced ginger, and Shaoxing wine. Bring to a boil over medium-high heat.
- Lower the heat and add soy sauce, sugar, and white pepper. Simmer for 10 minutes.
- In a second pot, boil water with a pinch of salt and oil. Blanch the choy sum for 40-50 seconds.
- Cook the egg noodles in boiling water for 3-4 minutes until al dente, drain, and transfer to a serving bowl.
- Cook the wontons in boiling water until they float, about 3-5 minutes, and add to the serving bowl.
- Pour the hot broth over the noodles and wontons, then add char siu pork and choy sum.
- Garnish with sesame oil and serve hot.
