Ingredients
  

For the Soup
  • 6 cups Chicken Broth Forms the rich base of the soup.
  • 2 inch Ginger Sliced.
  • 2 tablespoons Shaoxing Wine Dry sherry can be substituted.
  • 2 tablespoons Light Soy Sauce Regular soy sauce works as well.
  • 1 teaspoon Sugar Balances flavors.
  • 1 pinch White Pepper Substitute black pepper if desired.
For the Noodles and Wontons
  • 8 ounces Thin Egg Noodles Hong Kong-style preferred.
  • 1 package Wontons Homemade or frozen.
For the Garnish
  • 1 cup Char Siu Pork Leftover rotisserie chicken can be substituted.
  • 1 bunch Choy Sum Or Baby Bok Choy, can substitute with other greens.
  • 1 tablespoon Sesame Oil Drizzle sparingly for flavor.
  • to taste Salt Adjust to taste.

Method
 

Preparation
  1. In a large pot, combine the chicken broth, sliced ginger, and Shaoxing wine. Bring to a boil over medium-high heat.
  2. Lower the heat and add soy sauce, sugar, and white pepper. Simmer for 10 minutes.
  3. In a second pot, boil water with a pinch of salt and oil. Blanch the choy sum for 40-50 seconds.
  4. Cook the egg noodles in boiling water for 3-4 minutes until al dente, drain, and transfer to a serving bowl.
  5. Cook the wontons in boiling water until they float, about 3-5 minutes, and add to the serving bowl.
  6. Pour the hot broth over the noodles and wontons, then add char siu pork and choy sum.
  7. Garnish with sesame oil and serve hot.
