  • 1 tablespoon Lemon Juice Vinegar is a tangy alternative if needed.
  • 1 tablespoon Dijon Mustard Yellow mustard can be used instead.
  • 1/2 teaspoon Red Pepper Flakes Tweak the amount to suit your spice tolerance.
  • 2 tablespoons Fresh Parsley (chopped) Substitute with chives or cilantro for a different twist.

Equipment

  • Large skillet
  • Saucepan
  • meat thermometer

Method

Step-by-Step Instructions
  1. Begin by cutting the boneless skinless chicken breasts or thighs into bite-sized pieces. Pat the chicken dry with paper towels to ensure a good sear, then season generously with salt, black pepper, smoked paprika, and garlic powder.
  2. Heat a large skillet over medium-high heat and add a splash of olive oil. Carefully add the seasoned chicken in a single layer, searing for 2-3 minutes without moving the chicken.
  3. Continue cooking the chicken for an additional 4-6 minutes, stirring occasionally, until it reaches a beautiful golden brown color and is fully cooked through.
  4. In a clean saucepan over low heat, melt ½ cup of unsalted butter until foamy. Add the minced garlic, lemon juice, Dijon mustard, red pepper flakes, and chopped parsley, stirring well.
  5. Return the seared chicken to the skillet and pour the warm cowboy butter sauce over it. Toss everything together for about 1-2 minutes.
  6. Transfer the Cowboy Butter Chicken Bites to a serving dish, drizzling any remaining sauce over the top. Garnish with additional chopped parsley.
