Cooking Steps
  1. Start by chopping your bell peppers and carrots into bite-sized pieces, and gather all your ingredients.
  2. In a large pot, pour a splash of oil and heat over medium heat. Add diced onions and minced garlic, stirring for 2-3 minutes until soft and fragrant.
  3. Stir in 2 tablespoons of Thai red curry paste, and continue to cook for about a minute until the paste blooms.
  4. Slowly pour in 1 cup of coconut milk and 4 cups of vegetable broth, stirring well to combine.
  5. Add your chosen dumplings and chopped vegetables into the pot, stirring to ensure they’re submerged. Cook for about 10 minutes.
  6. Remove from heat and stir in fresh lime juice. Finish with a sprinkle of chopped cilantro and green onions.
