Cooking Steps
- Start by chopping your bell peppers and carrots into bite-sized pieces, and gather all your ingredients.
- In a large pot, pour a splash of oil and heat over medium heat. Add diced onions and minced garlic, stirring for 2-3 minutes until soft and fragrant.
- Stir in 2 tablespoons of Thai red curry paste, and continue to cook for about a minute until the paste blooms.
- Slowly pour in 1 cup of coconut milk and 4 cups of vegetable broth, stirring well to combine.

- Remove from heat and stir in fresh lime juice. Finish with a sprinkle of chopped cilantro and green onions.
