  • 3 Large Eggs
  • 1 cup Cream or half-and-half for a lighter take
  • 1 teaspoon Cinnamon adjust to taste

Crust
  • 1 cup Spelt Flour or all-purpose flour
  • 1/2 cup Butter unsalted, cold
  • 1/4 cup Sugar brown sugar suggested
Optional Topping
  • 1 cup Maple Whipped Cream whip cream with maple syrup

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Roll out your spelt flour and butter mixture into a 9-inch pie pan, pressing evenly.
  2. Cover the crust with parchment paper and fill with pie weights. Bake for 15–20 minutes until edges are lightly golden.
  3. Let the crust cool slightly.
Filling
  1. In a large mixing bowl, whisk together apple butter, eggs, and cream until smooth.
  2. Add cinnamon and nutmeg, whisking for 2–3 minutes until fully combined.
Baking
  1. Pour the filling into the cooled crust, spreading evenly.
  2. Bake at 325°F (163°C) for 45–55 minutes until edges are puffed and center is slightly wobbly.
  3. Cool on a wire rack for 1 hour; then refrigerate for at least 6 hours to set.
Serving
  1. Slice the pie into wedges and serve with a dollop of Maple Whipped Cream.
