Preparation
- Preheat your oven to 350°F (175°C). Roll out your spelt flour and butter mixture into a 9-inch pie pan, pressing evenly.
- Cover the crust with parchment paper and fill with pie weights. Bake for 15–20 minutes until edges are lightly golden.
- Let the crust cool slightly.
Filling
- In a large mixing bowl, whisk together apple butter, eggs, and cream until smooth.
- Add cinnamon and nutmeg, whisking for 2–3 minutes until fully combined.
Baking
- Pour the filling into the cooled crust, spreading evenly.
- Bake at 325°F (163°C) for 45–55 minutes until edges are puffed and center is slightly wobbly.
- Cool on a wire rack for 1 hour; then refrigerate for at least 6 hours to set.
Serving
- Slice the pie into wedges and serve with a dollop of Maple Whipped Cream.
