  • 1 tablespoon Olive Oil or avocado oil
  • 1 medium Onion yellow or white
  • 2 cloves Garlic minced
  • 14.5 ounces Canned Diced Tomatoes or crushed or fresh diced
  • 1 cup Beef Broth or vegetable broth
  • 1 tablespoon Italian Seasoning or homemade blend
  • to taste Salt
  • to taste Freshly Ground Pepper
For Creaminess
  • 1 cup Greek Yogurt or plant-based yogurt
  • 1/2 cup Parmesan Cheese or nutritional yeast
For Garnish
  • to taste Basil or Parsley as preferred

Method
 

Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions, about 9 to 11 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add lean ground beef and sauté for 6 to 8 minutes until browned.
  3. Add chopped onion, stirring for 3 to 4 minutes until translucent. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add canned diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Simmer for 5 to 7 minutes to blend flavors.
  5. Remove from heat and stir in Greek yogurt and Parmesan cheese until smooth.
  6. Fold in the cooked penne pasta and toss to coat in the creamy sauce.
  7. Garnish with fresh herbs and serve warm.
