  • 2 cups Vegetable/Chicken Broth opt for low-sodium.
  • 1 medium Onion finely chopped.
  • 3 cloves Garlic minced.
  • 1 tablespoon Ginger fresh, grated or minced.
  • 1 cup Diced Tomatoes
  • 1 cup Bell Pepper red or yellow, diced.
  • 2 cups Spinach/Kale chopped.
  • 1 tablespoon Fish Sauce adjust based on salt preference.
  • 2 tablespoons Lime Juice fresh.
  • 1 tablespoon Curry Powder adjust to taste.

  • 1/4 cup Fresh Cilantro optional, for garnish.
  • 2 pieces Lime Wedges for serving.

Step-by-Step Instructions
  1. Prep the white fish fillets by rinsing them under cold water, patting dry, and cutting into bite-sized pieces. Season with salt and pepper.
  2. In a large pot, heat 2 tablespoons of oil over medium heat. Sauté the onion for about 5 minutes until translucent.
  3. Add minced garlic and ginger, stirring for 1-2 minutes until fragrant.
  4. Incorporate diced tomatoes and bell pepper, cooking for 5-7 minutes until softened.
  5. Pour in coconut milk and broth, bringing to a simmer for 5 minutes.
  6. Stir in fish sauce, lime juice, curry powder, and season with salt and pepper. Simmer for another 2-3 minutes.
  7. Add fish pieces, cooking for about 10 minutes until opaque and tender.
  8. Fold in spinach or kale, cooking for an additional 2-3 minutes until wilted.
  9. Serve hot in bowls, garnished with cilantro and lime wedges.
