Step-by-Step Instructions
  1. Cook the frozen udon noodles according to package instructions, typically boiling for 5-7 minutes. Reserve ½ cup noodle water before draining.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and chopped shallot, sautéing for 2-3 minutes until fragrant.
  3. Stir in gochujang and cook for about 30 seconds. Gradually pour in heavy cream and reserved noodle water. Mix in soy sauce and gochugaru until combined.
  4. Allow the sauce to simmer for 3-5 minutes over low heat until thickened to desired consistency.
  5. Add the cooked udon noodles to the sauce and toss for 2-3 minutes until thoroughly coated.
  6. Transfer noodles into bowls and top with parmesan cheese, chopped green onion, and egg yolk if desired. Serve hot.
