- Heat 2 tablespoons of olive oil in a large pot over medium-low heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for 1-2 minutes until fragrant.
- Sprinkle in 1 teaspoon of oregano, 1½ teaspoons of cumin, 1 teaspoon of salt, ½ teaspoon of pepper, ½ teaspoon paprika, and optional ¼ teaspoon cayenne pepper. Stir for about 1 minute to toast the spices.
- Pour in 4 cups of chicken stock and add the 4-ounce can of green chiles. Bring the mixture to a low boil, which takes around 5 minutes.
- Once boiling, reduce the heat to low and let simmer uncovered for about 25 minutes, stirring occasionally.
- Lower the heat to medium and stir in ½ cup of heavy whipping cream, 4 ounces of cubed cream cheese, and 3 cups of shredded rotisserie chicken. Cook for an additional 10-15 minutes.
