Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. Caramelize the Onions: Heat olive oil in a skillet over medium heat. Add onions and sauté for 15-20 minutes until golden.
  3. Add Garlic: Lower heat and add minced garlic. Cook for 1-2 minutes until fragrant.
  4. Create the Sauce: Pour in vegetable broth and simmer for 3-5 minutes.
  5. Add Cream: Stir in coconut cream and soy sauce or tamari. Cook for 2-3 minutes until combined.
  6. Combine Pasta & Sauce: Add cooked pasta to the skillet and toss until coated evenly with the sauce.
  7. Season: Add salt, pepper, and nutritional yeast if desired. Adjust seasoning to taste.
  8. Serve: Transfer pasta to plates and garnish with fresh herbs. Enjoy!
