Step-by-Step Instructions
  1. In a mixing bowl, combine chicken thighs with rice vinegar, soy sauce, minced ginger, kosher salt, and black pepper. Let marinate for 15 to 20 minutes.
  2. Prepare by beating eggs in one bowl and putting cornstarch in another. Dip each marinated chicken piece in egg, then coat with cornstarch.
  3. Line air fryer basket with parchment paper. Cook chicken at 400°F for 8 minutes, flip, spritz with oil, and cook for another 7 minutes until crispy.
  4. Prepare sauce by mixing ketchup, gochujang, honey, soy sauce, sesame oil, and minced garlic in a bowl.
  5. Toss cooked chicken with the sauce and garnish with scallions and sesame seeds before serving.
