Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. In a large skillet, heat over medium-high heat and add one pound of lean ground beef. Cook until browned, about 6-8 minutes. Mix in taco seasoning and red enchilada sauce, let simmer for another 2-3 minutes.
  3. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds until warm and pliable.
  4. Brush one side of each tortilla with olive oil, place oiled side down on baking sheet. Spoon in beef filling and sprinkle with cheese. Fold tortillas to create tacos.
  5. Bake in the preheated oven for 16 minutes until golden and crispy.
