  • 1 pound Ground Turkey Use 93/7 or 85/15 for preferred fat content.
  • 1 can Black Beans Drained but don’t rinse for best flavor.
  • 1 can Green Chiles Use Hatch chiles or your favorite canned variety.
  • 1/4 cup Cilantro Omit if not preferred.
  • 8 units Fajita-sized Flour Tortillas For easy handling and filling.
For the Creamy Avocado Sauce
  • 1/2 medium Avocado Use half for creamy texture.
  • 1/2 cup Sour Cream Greek yogurt can be used as a substitute.
  • 1 tablespoon Fresh Lime Juice Can substitute with lemon juice.
  • 1/4 teaspoon Kosher Salt Adjust to taste.

Method
 

Preparation
  1. In a blender, combine half a ripe avocado, sour cream, fresh lime juice, and a pinch of kosher salt. Blend until smooth and creamy, adding a splash of water to reach desired consistency. Transfer to a bowl and refrigerate while preparing the tacos.
  2. Heat a non-stick skillet over medium heat and add a tablespoon of oil. Once hot, add the ground turkey and chopped onion, stirring occasionally until browned, about 4-5 minutes.
  3. Lower heat and stir in drained black beans and green chiles. Sprinkle in spices and add a splash of water. Let simmer for 15 minutes, stirring occasionally.
  4. Preheat oven to 400°F (200°C). Arrange tortillas on a baking sheet, sprinkle cheese, and spoon turkey filling down the center. Bake for 10-12 minutes until edges are golden.
  5. Remove from oven, let cool slightly, and serve with creamy avocado sauce for dipping.

Notes
