Cooking Steps
  1. Bring a large pot of salted water to a rolling boil over high heat. Carefully add the gnocchi, cooking them for about 2-3 minutes, or until they float to the top. Use a slotted spoon to remove the gnocchi from the pot, letting any excess water drain, and set them aside on a plate.
  2. In a large frying pan, heat olive oil over medium-high heat until shimmering. Once hot, gently add the drained gnocchi in a single layer. Let them cook undisturbed for 2-3 minutes, allowing them to develop a crispy, golden-brown bottom.
  3. After the initial sauté, use a spatula to gently stir the gnocchi, allowing them to brown on all sides. Continue cooking for another 2-3 minutes, ensuring they are evenly crisped and golden.
  4. Reduce the heat to medium and add minced garlic to the pan. Sauté for about 1 minute, stirring frequently, until the garlic becomes fragrant and lightly golden.
  5. Add fresh spinach to the pan, gently stirring it in with the garlic and gnocchi. Cook for about 2-3 minutes, or until the spinach wilts down.
  6. Sprinkle in salt, freshly cracked black pepper, and optional red pepper flakes to taste. Stir in crumbled feta cheese until well combined.
