  • 2 cloves Minced Garlic
  • 2 tablespoons Fresh Herbs Optional; customize with basil, mint, or chives
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

  • 0.5 cups Yogurt For dipping
  • 1 medium Avocado Sliced or mashed

Method
 

Step-by-Step Instructions
  1. Wash the zucchini thoroughly, trim both ends and grate it. Squeeze out the excess moisture.
  2. In a mixing bowl, combine the drained zucchini with eggs, flour, parmesan cheese, yogurt, garlic, and herbs. Season with salt and pepper.
  3. Preheat a skillet over medium heat, add olive oil until shimmering.
  4. Drop portions of the batter into the skillet, shape into patties, and cook for 3-4 minutes until golden brown. Flip and cook for another 2-3 minutes.
  5. Remove from skillet and drain on paper towels. Serve hot with optional toppings.
  6. For air frying, preheat air fryer to 400°F, shape fritters, and cook for 8-10 minutes, flipping halfway.
