  • 1 cup Red Lentils Can substitute with black beans or chickpeas
  • 1 large Sweet Potato Grated
  • 1 medium Onion Finely chopped; shallots can be used
  • 2 cloves Garlic Minced; fresh preferred
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Ground Coriander
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Flour Can swap with chickpea flour or gluten-free flour
  • 2-3 tablespoons Olive Oil For frying
Creamy Sauce Ingredients
  • 1 ripe Avocado Substitute with Greek yogurt if desired
  • 1 handful Cilantro Can substitute with parsley
  • 1 tablespoon Lime Juice Vinegar works as a substitute
  • 1/2 cup Yogurt Dairy-free yogurt can be used

Method
 

Preparation Steps
  1. In a medium saucepan, combine 1 cup of red lentils with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for 10-12 minutes. Drain excess water and cool slightly.
  2. In a large mixing bowl, combine cooked lentils, grated sweet potato, onion, garlic, spices, salt, pepper, cilantro, and flour. Mix until well combined.
  3. Allow the lentil mixture to rest for 5-10 minutes to help with binding.
  4. Heat olive oil in a skillet over medium heat. Shape the lentil mixture into palm-sized patties, approximately ½ inch thick.
  5. Fry the patties for 3-4 minutes on each side until golden brown and crispy.
  6. In a blender, combine avocado, cilantro, garlic, lime juice, and yogurt. Blend until smooth, adding water if needed for consistency.
  7. Serve patties warm, drizzled with the creamy avocado cilantro sauce.
