Chocolate Cake Instructions
- Prepare Chocolate Simple Syrup by combining water, sugar, and cocoa powder in a saucepan over medium heat. Bring to a boil and simmer for 2-3 minutes. Cool before using.
- Make Cake Batter by whisking together flour, sugar, cocoa, baking powder, baking soda, and salt. Add warm water, sour cream, oil, eggs, and vanilla. Blend until smooth.
- Bake Layers by greasing and flouring two 9-inch round pans. Divide and smooth batter between the pans. Bake at 350°F for 22-26 minutes.
- Cool Layers in the pans for 15 minutes, then invert onto a wire rack to cool completely.
- Make Buttercream by beating softened butter until creamy, adding cocoa, salt, and vanilla. Gradually mix in powdered sugar and cream until light and fluffy. Fold in melted dark chocolate.
- Assemble Cake by brushing chocolate syrup on each layer, spreading buttercream between layers, and covering the cake with remaining buttercream.
- Final Frosting involves smoothing the buttercream over the entire cake and pressing mini chocolate chips into the sides.
