For the Salad
  • 1 pint grape or cherry tomatoes Halved.
  • 8 ounces fresh mozzarella balls Halved; burrata can be substituted.
  • ¼ cup fresh basil leaves Torn.
For the Dressing
  • ¼ cup extra-virgin olive oil Light olive oil or avocado oil can be used.
  • 2 tablespoons balsamic glaze Reduce balsamic vinegar for a quick substitute.
  • salt To taste.
  • freshly ground black pepper To taste.

Method
 

Steps for Preparation
  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente, according to package instructions, approximately 8-10 minutes. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled pasta with halved tomatoes and halved mozzarella. Toss gently to combine.
  3. Tear basil leaves and add them to the mixture. Gently fold to combine.
  4. Drizzle olive oil over the salad and toss gently.
  5. Season with salt and pepper, adjusting to taste. Toss again gently to distribute seasonings evenly.
  6. Transfer salad to a serving dish and arrange nicely.
  7. Drizzle balsamic glaze over the salad before serving.
  8. Chill for up to 2 hours or serve immediately.
