Method
 

Preparation Steps
  1. In a small bowl, combine yogurt or mayo with salt and whisk well. Let it sit for at least 15 minutes.
  2. Thinly slice the red onion and soak in cold water for 10-15 minutes. Drain well.
  3. Cook pasta in salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  4. Slice the cucumber into thin half-moons and sprinkle with salt. Let drain in a colander for 30 minutes.
  5. In a large mixing bowl, combine the cooked pasta, drained onions, and cucumbers. Add any optional vegetables.
