For the Noodles
  • 2 cups flour for homemade hand-pulled noodles
For the Spice Mix
  • 1 tablespoon whole cumin seeds toast to unlock flavor
  • 1 tablespoon Sichuan peppercorns toast before grinding
  • 1 tablespoon whole coriander seeds toast before grinding
For the Lamb
  • 1 pound thinly sliced lamb (loin or shoulder) choose well-marbled cuts
  • 1 tablespoon Shaoxing wine substitute with dry sherry if needed
  • 1 teaspoon salt for seasoning
  • 2 tablespoons peanut oil for marinating and cooking
  • 2 teaspoons cornstarch helps tenderize lamb
For the Sauce
  • ½ cup chili oil use homemade for bold flavor
  • 3 tablespoons Chinkiang vinegar
  • 4 teaspoons light soy sauce milder than dark soy sauce
  • 4 teaspoons dark soy sauce for color and sweetness
For Aromatics
  • 8 cloves garlic (minced)
  • 2 inches ginger (minced)
  • 1 large red onion (thinly sliced)
  • 1 large hot green chili (sliced) adjust to heat preference
For Garnish
  • ½ bunch cilantro (chopped)

Method
 

Step‑by‑Step Instructions
  1. Combine flour and water to create the noodle dough, knead for 10 minutes, then rest for 30 minutes.
  2. Toast spices in a dry skillet over medium heat for 5 minutes, then grind into a fine powder.
  3. Marinate lamb with wine, salt, oil, and cornstarch for 15 minutes.
  4. Cook lamb in a hot skillet with oil for 1 minute, then transfer to a plate.
  5. Stir-fry garlic, ginger, onion, and chili in the skillet for 2 minutes.
  6. Return lamb to skillet, add spice mix and sauces, stir-fry for 3 minutes.
  7. Mix in cilantro, then transfer lamb to a serving plate.
  8. Cook noodles in boiling water for 1-2 minutes, then drain and cool.
  9. Serve noodles topped with lamb and sauce mixture.
