  • 1 lb Ground Beef can substitute with shredded chicken or lentils
  • 1 Onion yellow or white, diced
  • 2 cloves Minced Garlic fresh preferred
  • 1 tsp Cumin
  • 1 tbsp Chili Powder adjust based on heat preference
For Assembly
  • 8 Tortillas corn or flour, lightly fried
  • 2 cups Enchilada Sauce store-bought or homemade
  • 2 cups Shredded Cheese any melting cheese

Method
 

Steps
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and tools.
  2. Cook ground beef and diced onions in a skillet over medium heat for 5-7 minutes until browned.
  3. Add minced garlic, cumin, and chili powder. Sauté for an additional minute.
  4. Spoon beef mixture onto each tortilla. Roll and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over tortillas and sprinkle with shredded cheese.
  6. Bake uncovered for 20-25 minutes until cheese is bubbly and golden.
  7. Remove from oven and let rest for a few minutes. Serve hot, garnished as desired.
