  • 1 lb Squid Tubes Can substitute with any favorite seafood
  • 1 lb Tiger Shrimp Can be replaced with prawns or scallops
Dressing
  • 1/3 cup Extra Virgin Olive Oil Best choice
  • 1 medium Tangerine Oranges can be substituted
  • 1 medium Lemon Fresh lemons for best flavor
  • 1 tbsp Honey Dijon Mustard Regular Dijon can be used
  • 2 cloves Garlic Minced, fresh garlic gives the best taste
  • 1/4 cup Parsley Fresh preferred, dried can suffice
Flavoring
  • 2 stalks Celery For crisp texture
  • 2 leaves Bay Leaf Dried is ideal
  • 1 tbsp Peppercorns Black or white based on preference
  • to taste Salt Adjust according to preference

Method
 

Step-by-Step Instructions
  1. Rinse the octopus under cold water and place it in a large pot. Add chopped celery, lemon juice, bay leaf, peppercorns, and salt. Fill with water to cover the octopus, bring to a boil and simmer for 40-45 minutes until tender.
  2. Once cooled, slice the octopus into bite-sized pieces.
  3. In the same pot, poach the squid for 2 minutes until opaque, then remove. Poach the shrimp for another 2 minutes until pink.
  4. In a mixing bowl, combine olive oil, lemon juice, tangerine juice, garlic, mustard, parsley, and salt to create the dressing.
  5. In a large bowl, combine octopus, squid, and shrimp, then pour the dressing over the seafood and toss gently.
