Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Pulse the raw pistachios in a food processor until coarse, then set aside.
  3. In a large mixing bowl, combine processed pistachios, almond flour, baking soda, and sea salt.
  4. Add maple syrup, melted coconut oil, vanilla extract, and almond extract, stirring until a sticky dough forms.
  5. Scoop tablespoons of dough, rolling into balls and placing them on the prepared baking sheet.
  6. Flatten each dough ball slightly and top with whole or chopped pistachios.
  7. Bake for 10-12 minutes until edges are golden and centers are soft.
  8. Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack.
