Step-by-Step Instructions
  1. In a large skillet over medium heat, add strips of bacon and cook until crispy, approximately 6-8 minutes. Remove and drain on paper towel, leaving bacon fat in the pan.
  2. Add thinly sliced onions to the skillet with bacon fat. Cook for 8-10 minutes, stirring occasionally until golden and caramelized.
  3. Add chopped potatoes to the skillet with onions and season generously with salt, pepper, and caraway seeds. Cook on medium-high for 10-12 minutes until golden and tender.
  4. Nestle bratwurst into the skillet among the potatoes. Add a splash of beer or cider for deglazing, if using, and simmer for 2-3 minutes.
  5. Stir in sauerkraut, combine well, lower heat, and cover to simmer for 15-20 minutes.
  6. Once bratwurst is cooked and potatoes are tender, crumble reserved bacon over top and serve with mustard.
