Ingredients
  

For the Filling
  • 1 pound Sausage Meat can use ground turkey or chicken for a lighter option
  • 1 medium Onion (finely diced) shallots or green onions can be substitutes
  • 2 cloves Garlic (minced) can use garlic powder if fresh isn’t available
  • 1 teaspoon Dried Sage
  • 1 teaspoon Dried Thyme Italian seasoning is a suitable swap
  • to taste Ground Black Pepper
  • to taste Salt
For the Pastry
  • 1 sheet Puff Pastry can use phyllo dough with adjusted baking times
  • 1 Egg (for wash) omit for vegan version or use a flaxseed egg

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, sauté finely diced onion and minced garlic in a drizzle of olive oil until soft, about 5 minutes. Mix in the sausage meat, sage, thyme, salt, and pepper. Cook until the sausage is no longer pink, about 8-10 minutes.
  3. Roll out thawed puff pastry on a floured surface to 1/8 inch thick. Cut into approximately 4-inch rectangles.
  4. Place a portion of the sausage mixture down the center of each rectangle. Fold over and seal the edges to secure the filling.
  5. Cut assembled rolls into 2-3 inch pieces, whisk an egg, and brush the tops with egg wash.
  6. Bake on a lined baking tray for 20-25 minutes until puffed and golden brown.
  7. Allow to cool for a few minutes. Serve warm with dipping sauces like mustard or garlic aioli.
