Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat until shimmering. Add the chopped medium onion and sauté for 3-4 minutes until it becomes translucent.
  2. Stir in the minced garlic and freshly grated ginger, cooking for an additional minute until fragrant. Then, add curry powder, ground turmeric, and chili powder, and sauté for 1 more minute.
  3. Add the bite-sized pieces of chicken breast to the skillet. Cook for 5-6 minutes, stirring until the chicken is lightly browned and no longer pink.
  4. Pour in a can of coconut milk and add salt to taste. Stir together and bring to a gentle simmer for 15 minutes.
  5. Fold in the diced mango carefully and allow to cook for an additional 3-4 minutes until warmed through but still firm.
  6. Garnish with fresh cilantro leaves and serve hot with basmati rice or naan.
