Method
 

Preparation Steps
  1. Prepare corn by cutting kernels off fresh corn or draining canned corn.
  2. In a mixing bowl, combine sour cream, mayonnaise, and cream cheese until smooth.
  3. Stir in cheddar and pepper jack cheese along with garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper until well mixed.
  4. Fold in corn, green onions, red bell pepper, and jalapeño into cheese mixture.
  5. Chill for 30 minutes or bake at 375°F (190°C) for 20-25 minutes until bubbly.
  6. Garnish with crumbled bacon and cilantro before serving.
