Ingredients
  

For the Pasta
  • 8 ounces Vegetable Pasta can swap with gluten-free pasta
For the Veggies
  • 1 cup Chopped Carrots cook briefly to soften
  • 1 cup Chopped English Cucumber use peeled regular cucumber if preferred
  • 1 cup Halved Cherry Tomatoes
For the Creaminess
  • 1 cup Fresh Mozzarella Pearls can substitute diced mozzarella
For the Flavor
  • 1/4 cup Chopped Fresh Basil substitute with fresh oregano or parsley
  • 1/4 cup Chopped Fresh Parsley
  • 1 teaspoon Granulated Garlic use fresh garlic for more flavor
For the Dressing
  • 3 tablespoons Balsamic Vinegar can use red wine or apple cider vinegar
  • 1/4 cup Extra Virgin Olive Oil

Method
 

Step-by-Step Instructions
  1. Start by bringing a large pot of salted water to a rapid boil over high heat. Once boiling, add the vegetable pasta and cook according to the package instructions for about 8–10 minutes until al dente.
  2. After the pasta has cooked for 3 minutes, toss in the chopped carrots to soften them slightly. Allow them to cook together for the final 5–7 minutes. Once done, drain the mixture and rinse with cold water.
  3. Chop half of your English cucumber into small pieces for the salad, and carve the other half into fun jack-o-lantern faces.
  4. In a large mixing bowl, combine the diced cucumber pieces, halved cherry tomatoes, fresh mozzarella pearls, and chopped basil and parsley. Toss everything together gently.
  5. Add the cooled pasta and carrots to the bowl of mixed vegetables. Gently fold to incorporate without breaking the mozzarella pearls.
  6. Drizzle balsamic vinegar and extra virgin olive oil over the mixture. Add granulated garlic, salt, and pepper to taste, then mix thoroughly.
  7. Garnish with carved cucumber faces. Chill in the refrigerator for about 30 minutes before serving.
