  • 2 medium Onions Yellow onions preferred
  • 2 tablespoons Olive Oil Can substitute with vegetable or canola oil
  • 2 pounds Beef Chuck Roast Cubed
  • 1 medium Green Pepper Any color bell pepper can be used
  • 3 cloves Garlic Minced; fresh preferred
  • 1 medium Tomato Chopped; canned diced tomatoes can work as a substitute
  • 1 teaspoon Kosher Salt Can use sea salt
  • 1 teaspoon Black Pepper Adjust to taste
  • 2 tablespoons Hungarian Paprika Essential for flavor
  • 1 teaspoon Dried Marjoram Can substitute with thyme or oregano
  • 1 teaspoon Caraway Seed Omit if unavailable
  • 2 tablespoons Tomato Paste
  • 4 cups Beef Broth Low-sodium recommended
  • 1 cup Dry Red Wine Can substitute with balsamic vinegar
  • 1 leaf Bay Leaf Remove before serving
  • 2 tablespoons Fresh Parsley For garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 325°F (163°C).
  2. In a Dutch oven, heat a splash of olive oil over medium heat. Add chopped onions with a pinch of kosher salt. Sauté for about 15-20 minutes until golden.
  3. Increase heat to medium-high and brown the cubed beef chuck for about 5-10 minutes.
  4. Mix in the sautéed onions, green pepper, garlic, tomato, paprika, marjoram, caraway seeds, tomato paste, beef broth, and wine.
  5. Bring the mixture to a simmer over medium-high heat, then cover slightly and transfer to the preheated oven.
  6. Braise in the oven for 1.5 to 2 hours, checking occasionally.
  7. Once fork-tender, remove from oven, discard bay leaf, and garnish with fresh parsley.
  8. Serve hot over spaetzle or noodles.
