- Preheat your oven to 325°F (163°C).
- In a Dutch oven, heat a splash of olive oil over medium heat. Add chopped onions with a pinch of kosher salt. Sauté for about 15-20 minutes until golden.
- Increase heat to medium-high and brown the cubed beef chuck for about 5-10 minutes.
- Mix in the sautéed onions, green pepper, garlic, tomato, paprika, marjoram, caraway seeds, tomato paste, beef broth, and wine.
- Bring the mixture to a simmer over medium-high heat, then cover slightly and transfer to the preheated oven.
- Braise in the oven for 1.5 to 2 hours, checking occasionally.
- Once fork-tender, remove from oven, discard bay leaf, and garnish with fresh parsley.
- Serve hot over spaetzle or noodles.
