Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Trim the tops off 2 heads of garlic, drizzle with olive oil, and wrap in aluminum foil. Roast for 40-50 minutes until soft and fragrant.
  2. Once cooled, squeeze the roasted garlic into a bowl and mash until smooth. Add cream cheese and sour cream, mixing until creamy.
  3. Gently fold in shredded mozzarella and half of the grated Parmesan. Season with salt and pepper to enhance flavor.
  4. Preheat the oven to 350°F (175°C). Transfer the dip mixture to a baking dish, spread evenly, and top with the remaining Parmesan. Bake for 25-28 minutes, until bubbling and golden.
  5. Allow to cool for 5 minutes, garnish with parsley, and serve with crostini or crackers.
