Ingredients
  

For the Pasta
  • 8 oz dry macaroni noodles Cook until al dente.
For the Vegetables
  • 0.5 cup finely diced sweet gherkins Can substitute with dill pickles.
  • 0.75 cup finely diced red bell pepper Any sweet pepper can be used.
  • 0.33 cup thinly sliced celery Optional: use cucumber.
  • 0.33 cup finely diced red onion Substitute with shallots if desired.
  • 2 large hard-boiled eggs, finely diced Omit for vegan version.
For the Dressing
  • 0.75 cup mayonnaise Vegan mayo for dairy-free.
  • 0.25 cup sour cream Substitute with dairy-free yogurt if desired.
  • 2 Tbsp sweet pickle juice Use vinegar for a sharper taste.
  • 1 Tbsp red wine vinegar Apple cider vinegar can be used.
  • 1 Tbsp sugar Adjust or omit based on preference.
  • 2 tsp Dijon mustard Use yellow mustard for milder flavor.
  • 0.25 tsp salt Adjust to taste.
  • 0.25 tsp black pepper Adjust to taste.
  • 0.125 tsp garlic powder Can omit if desired.
  • 0.125 tsp crushed red pepper Adjust for heat preference.

Method
 

Cooking Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil. Add the macaroni noodles and cook for 8–10 minutes, or until al dente. Drain and rinse under cold water.
  2. While the pasta cools, finely dice the vegetables and gather them in a large mixing bowl.
  3. In a separate bowl, whisk together mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
  4. Add the cooled pasta to the bowl of diced vegetables and pour the dressing over everything. Gently fold until all ingredients are well coated.
  5. Cover with plastic wrap and refrigerate for at least one hour before serving.
