Preparation Steps
- Cut the sourdough bread into four 1/2-inch thick slices.
- Top two slices of bread with camembert cheese, thyme, lemon zest, and pepper.
- Slice the honeycrisp apple thinly and layer on top of the camembert.
- On the other two slices of bread, place a thick layer of aged cheddar cheese.
- Press the apple-topped slices over the cheddar slices to assemble the sandwich.
- Heat a non-stick skillet over medium heat and lightly grease with avocado oil spray.
- Cook the sandwich with the cheddar side down for 3-4 minutes until golden brown.
- Flip carefully, spray the top side with oil, and cook for another 3-4 minutes until gooey.
- Remove from skillet, slice in half, and serve immediately.

Notes
Store leftovers in an airtight container for up to 3 days. For freezing, wrap sandwiches individually and store for up to 3 months. Reheat in a skillet or toaster oven.
