- Season the chicken breasts with salt, black pepper, and cumin on both sides and set aside.
- In a bowl, combine salsa verde, olive oil, and lime juice. Whisk until smooth and add the chicken, coating it thoroughly. Cover and marinate for at least 30 minutes in the refrigerator.
- Preheat the grill to medium-high heat (375°F to 450°F).
- Place marinated chicken on the grill and cook for 4-5 minutes without moving. Flip and grill for another 4-5 minutes until the internal temperature reaches 165°F.
- In the last minute, place the pepper jack cheese slices on top of the chicken and close the grill lid until melted.
- Remove the chicken from the grill, let it rest for a couple of minutes, garnish with cilantro, and serve with lime wedges.
