Step-by-Step Instructions
  1. Season the chicken breasts with salt, black pepper, and cumin on both sides and set aside.
  2. In a bowl, combine salsa verde, olive oil, and lime juice. Whisk until smooth and add the chicken, coating it thoroughly. Cover and marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium-high heat (375°F to 450°F).
  4. Place marinated chicken on the grill and cook for 4-5 minutes without moving. Flip and grill for another 4-5 minutes until the internal temperature reaches 165°F.
  5. In the last minute, place the pepper jack cheese slices on top of the chicken and close the grill lid until melted.
  6. Remove the chicken from the grill, let it rest for a couple of minutes, garnish with cilantro, and serve with lime wedges.
