For the Shrimp
  • 1 pound large shrimp fresh or thawed frozen
  • 2 tablespoons olive oil or avocado oil
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika or regular paprika with cayenne
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 unit lime juice
For the Corn Salsa
  • 2 cups corn fresh or frozen
  • 1 unit red bell pepper diced
  • ¼ cup red onion diced
  • 2 tablespoons cilantro chopped
  • 1 tablespoon lime juice
  • salt to taste
  • black pepper to taste
  • 1 unit jalapeño optional, for heat
For Serving
  • 1 unit sliced avocado ripe
  • 2 cups cooked rice or quinoa for gluten-free
  • 2 cups shredded lettuce
  • 1 unit lime wedges for serving

Method
 

Instructions
  1. In a medium bowl, whisk together olive oil, garlic, smoked paprika, chili powder, ground cumin, salt, and black pepper. Squeeze lime juice in, add shrimp, toss to coat, and marinate for 15 minutes.
  2. Heat a grill pan or skillet over medium-high heat. If using fresh corn, grill it for about 5 minutes. In a bowl, combine corn, red bell pepper, red onion, cilantro, lime juice, salt, and pepper.
  3. Preheat grill to medium-high (400°F/200°C). Thread shrimp onto skewers if desired and grill for 2-3 minutes per side until the shrimp turn pink and opaque.
  4. Divide cooked rice among bowls, layer with lettuce, top with grilled shrimp, sliced avocado, and corn salsa. Garnish with lime wedges and additional cilantro if desired.
