Ingredients

  • 1 kg Beef Steak Chuck steak or braising beef can be used
  • 2 medium Onions Shallots can be substituted
  • 2 medium Carrots Parsnips can be used for variation
  • 2 stalks Celery Leeks can be substituted
  • 2 tablespoons Plain Flour Cornstarch for gluten-free
  • 500 ml Guinness Stout Any dark beer or beef broth can be substituted
  • 500 ml Beef Stock Vegetable stock for a lighter version
  • 2 tablespoons Worcestershire Sauce Soy sauce can be used in a pinch
  • 250 g Mushrooms Button or cremini varieties can be used

  • 1 sheet Puff Pastry Shortcrust pastry can be substituted

Method
 

Preparation
  1. Begin by cubing the beef steak into bite-sized pieces, about 1 inch thick.
  2. Finely chop the onions, carrots, and celery, then slice the mushrooms.
  3. Preheat your oven to 200°C (400°F) for baking the pie.
Cooking
  1. In a large pan, heat a tablespoon of oil over medium-high heat.
  2. Add the beef in batches, browning for about 5-7 minutes until golden.
  3. Transfer the beef to a plate and set aside.
  4. Using the same pan, lower the heat and add the chopped vegetables.
  5. Cook for about 5 minutes until softened, scraping browned bits from the pan.
  6. Sprinkle flour over the veggies, stirring for 1 minute.
  7. Gradually pour in Guinness while stirring to avoid lumps.
  8. Add beef stock, Worcestershire sauce, and return the beef and mushrooms.
  9. Simmer for about 20 minutes until the gravy thickens.
Assembly and Baking
  1. Transfer filling into a pie dish in an even layer.
  2. Roll out the puff pastry to cover the filling with some overhang.
  3. Seal the edges and cut slits on top for steam to escape.
  4. Bake in the oven for 30-40 minutes until golden brown.
Serving
  1. Let the pie rest for 10-15 minutes before slicing and serving.
