Step-by-Step Instructions
  1. Prep the Ingredients: Chop the chicken breasts into bite-sized pieces, slice the zucchini, red bell peppers, and red onion into thin strips, halve the cherry tomatoes, and mince the garlic.
  2. Heat the Oil: In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat until shimmering.
  3. Sear the Chicken: Add chicken to the skillet, searing for 5-7 minutes until golden brown and cooked through. Remove from skillet.
  4. Sauté Onions and Garlic: In the same skillet, add red onion and garlic, sauté for 2-3 minutes until onion is translucent.
  5. Add Harder Vegetables: Add zucchini and red bell peppers, sauté for 3-4 minutes until slightly softened.
