Method
 

Preparation
  1. In a small mixing bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, dried thyme, and dried sage. Whisk together until blended.
  2. In a large bowl, add ground pork along with the prepared spice blend and light brown sugar. Mix thoroughly until evenly distributed.
  3. Divide meat mixture into eight portions, roll into balls and flatten to create patties.
  4. Heat a large skillet over medium heat. Add avocado or canola oil.
  5. Cook patties for about 5 minutes on one side until browned. Flip and cook another 5 minutes.
  6. Remove patties from skillet and let rest on a paper towel-lined plate to absorb excess oil.
