  • 4 large Burrito Size Flour Tortillas Any large size will work.
  • 3 cups Shredded Cheese Use cheddar or a Mexican blend.
  • 1/4 cup Chopped Cilantro Optional, substitute with parsley if preferred.
Optional Toppings
  • 1 cup Sour Cream For a creamy addition.
  • 1/2 cup Pickled Jalapeños For an extra kick.

Method
 

Cooking Instructions
  1. Preheat the griddle to medium heat (around 350°F). Drizzle cooking oil over the surface to prevent sticking.
  2. Cook the diced chicken thighs or breasts, seasoned with salt, pepper, and BBQ seasoning, for about 6 minutes until brown and cooked through.
  3. Add BBQ sauce and hot honey to the cooked chicken and simmer for an additional 2 minutes.
  4. Lower the heat, add more oil, and warm the flour tortillas for about 1 minute until puffed.
  5. Assemble the quesadillas by adding cheese, the chicken mixture, more sauce, and cilantro, then top with more cheese.
  6. Fold the tortillas and cook for 1-2 minutes on each side until golden brown and crispy.
  7. Remove from the griddle, let sit for a minute, slice, and serve with optional toppings.
