  • 1 cup Heavy Cream or coconut cream for dairy-free

Preparation Steps
  1. Marinate the Chicken: In a mixing bowl, combine chicken thighs with salt, garlic powder, paprika, curry powder, and yogurt. Cover and marinate for at least 15 minutes.
  2. Cook the Chicken: Heat oil in a skillet over medium-high heat. Add marinated chicken, sear for 8-10 minutes until cooked through. Remove from skillet.
  3. Prepare the Sauce Base: In the same skillet, reduce heat to medium and add butter. Stir in garlic and onion, cooking until onion is translucent.
  4. Build the Sauce: Add tomato sauce and sugar, stir to combine. Simmer for 2-3 minutes, then return chicken to skillet and add heavy cream.
  5. Season and Simmer: Stir in cayenne, garam masala, curry powder, and black pepper. Reduce heat and simmer for 10 minutes.
  6. Finish with Butter: Stir in any remaining butter for a silky finish.
  7. Serve and Enjoy: Spoon Butter Chicken over rice or alongside naan. Garnish with parsley or cilantro.
