- Preheat your oven to 400ºF (204ºC) and prepare a mini muffin tin by greasing each cup.
- In a skillet over medium heat, cook the breakfast sausage until browned and crumbly (5-7 minutes). Drain excess grease.
- In a large bowl, combine pancake mix, cold water, and maple syrup. Stir gently until just combined.
- Fold in the cooked sausage and cheddar cheese gently, being careful not to overmix.
- Spoon the batter into greased muffin cups, filling them about three-quarters full.
- Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes, then transfer to a wire rack and serve warm with maple syrup if desired.
