- Preheat your oven to 375°F (190°C). Gather your ingredients for easy assembly.
- Slice the mini croissants in half horizontally. Mix mayonnaise and stoneground mustard in a bowl. Spread mixture on the inside of each croissant half.
- Layer each croissant with a slice of deli ham followed by a slice of Muenster cheese, then close with the other half.
- Arrange assembled croissants on a baking sheet lined with parchment paper. Bake for 10 to 15 minutes until cheese is melty and croissants are golden brown.
- Remove from the oven and let cool for a minute. Serve warm, optionally garnished with chopped chives.
