Ingredients
  

For the Batter
  • 225 g Unsalted Butter Ensure it’s at room temperature
  • 225 g Dark Soft Brown Sugar Provides caramel depth
  • 4 large Eggs Whisked before adding
  • 225 g Self-Raising Flour Sift with spices
For the Fruit Filling
  • 450 g Mixed Dried Fruit Rinse and dry before adding
  • 75 g Chopped Candied Peel Enhances flavor
  • 50 g Chopped Almonds Can substitute with other nuts
For the Spices
  • 1 tsp Mixed Spice Traditional festive flavor
  • 0.5 tsp Cinnamon Adds warmth
  • 0.25 tsp Nutmeg Contributes aromatic essence
For Moisture and Flavor
  • 1 tbsp Dark Molasses or Treacle For color and moisture
  • 2 tbsp Brandy Can be swapped with rum or orange juice

Method
 

Cake Preparation Steps
  1. Preheat your oven to 150°C (130°C fan/Gas Mark 2) and prepare a 20cm round cake tin.
  2. Cream the butter and sugar until light and fluffy.
  3. Gradually add whisked eggs to the butter-sugar mixture, mixing thoroughly.
  4. Sift and fold in the self-raising flour and mixed spices.
  5. Add dark molasses, followed by the mixed dried fruit, candied peel, almonds, and brandy.
  6. Transfer the batter into the prepared tin and bake for 2 to 2.5 hours.
  7. Let the cake cool in the tin for 10 minutes before transferring to a wire rack.
  8. Prick holes in the cake and brush with brandy for added moisture.
  9. Wrap the cooled cake and store it in a cool, dark place.
