Cake Preparation Steps
- Preheat your oven to 150°C (130°C fan/Gas Mark 2) and prepare a 20cm round cake tin.
- Cream the butter and sugar until light and fluffy.
- Gradually add whisked eggs to the butter-sugar mixture, mixing thoroughly.
- Sift and fold in the self-raising flour and mixed spices.
- Add dark molasses, followed by the mixed dried fruit, candied peel, almonds, and brandy.
- Transfer the batter into the prepared tin and bake for 2 to 2.5 hours.
- Let the cake cool in the tin for 10 minutes before transferring to a wire rack.
- Prick holes in the cake and brush with brandy for added moisture.
- Wrap the cooled cake and store it in a cool, dark place.
