  • 1 teaspoon salt
  • 2 large eggs or flax eggs for vegan
For the Streusel Topping
  • 1 cup brown sugar or white sugar
  • 1/2 cup unsalted butter melted
  • 1 teaspoon ground cinnamon or a mix of cinnamon and nutmeg
  • 1 cup old-fashioned oats can be omitted
For the Maple Glaze
  • 1 cup powdered sugar sifted
  • 1/4 cup pure maple syrup avoid imitation syrup
  • 2 tablespoons milk or cream or almond milk for dairy-free

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, beat pumpkin purée, sugar, and eggs until smooth. Combine with dry ingredients.
  4. In a small bowl, mix brown sugar, melted butter, cinnamon, and oats for streusel topping.
  5. Pour batter into the loaf pan and sprinkle streusel on top. Bake for 55 to 65 minutes.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack.
  7. Prepare the maple glaze by whisking together powdered sugar, maple syrup, and milk/cream.
  8. Drizzle the glaze over the cooled bread, slice, and serve.
